I was actually looking for a thread to post about this app I found, but couldn't find one.
I'm sure cory will have lots to contribute here. I just wanted to list some lesser knows apps that others might find intresting/usefull

Fairmount:
Free
mac only
Takes copy protected DVD's and remounts them as uncopy protected (must also have VLC installed)

DOSBox:
free
cross platform
Allows you to run DOS applications in almost any opperating system (with no noticable system slow dows)

DoubleTake:
not free
mac only
Takes your photos and stitches them together to for a panorama.(I'm still trying to get a crack for it)

VisualHub / ReduxEncoder:

Converts any video to any video (and does a good job too!)

Hear:

acts as the "mixer" in windows but also allows you to apply effects like eq, 3d sound, and

Awesome list, I just have a few points/alternatives to add:
A. We don't call them apps, we call them exes.
B. Here's some windows alternatives:
Fairmount: I don't know what you would really use this for beyond what MagicDVD (free) and Handbreak (free) already do.
DoubleTake: there's a free program from Microsoft that does this, but I can't remember what it's called.
VisualHub: really haven't found a good exe for this.
SoundSource: not an issue on windows.
Fluke: windows users don't use iTunes
DiskInventoryX: windows pretty much does this naitively

1) Fairmount is useful because it allows you to copy the DVD as a DVD on a mac. Even though Handbreak is mac compatible, it can't do 1-1 copies.

2)I would very much like to know the windows version of DoubleTake

3) While I can't prove how many people use itunes on windows I can say that as of 2007 there were over 500 million users on itunes. They can't all be mac's.

4) Your point on SoundSource...
I disagree with it.

Most sound cards show up in the notification area for windows, simply right click, and most of them will have the input/output list right there.
And if you have Vista or 7 the option is right in the volume control whether the driver software has it or not.

windows media player? who uses that? When I was on windows all i used was VLC and Winamp (winamp also plays ogg and flac nativly i believe (not sure about flac but defentially ogg))
